Rentio-Khatti Hyderabadi Dal

As reads from the name, the entire credit of this recipe goes to Hyderabadi cuisine. It is made with split pigeon beans or Rentio Toor Dal. The breakdown of its name simply means that it will taste sour instead of regular dal which is spicy. You must have heard about Hyderabadi Biryani which tastes best with premium basmati rice & now you know the second recipe which will make your meals feel different than any common dal recipes which you have been savoring for years.

Ingredients For Dal

  • 1 Cup Rentio Toor Dal
  • 1 Tomato (finely chopped)
  • ½ inch ginger or garlic (finely chopped)
  • 2 garlic cloves (grated or crushed)
  • Pinch of Turmeric Powder
  • Water (as required)

More Ingredients for Khatti Dal

  • 1 Tbsp seedless tamarind soaked in a ½ cup of water for about 30 minutes
  • 2 to 3 Green chilies (finely chopped)
  • 1 Tsp Coriander Powder
  • Pinch of Red Chili Powder
  • Salt (as required) Tampering
  • 3 to 4 Tbsp Pure Ghee/Oil
  • 2 to 3 Dry Red Chilies
  • 5 to 6 Garlic Cloves (finely chopped)
  • 10 to 12 Curry Leaves
  • ½ Tsp Cumin Seeds
  • Pinch of Hing

Making Khatti Hyderabadi Dal

  • Rinse the toor dal first and pressure cook it with tomatoes, ginger-garlic and a pinch of turmeric powder for 10-15 minutes or until the dal becomes soft and mushy
  • Once dal is cooked, mash it well with a wooden spoon or hand blender until you get a smoother consistency
  • Now add tamarind juice (Squeeze the soaked tamarind and squeeze it into same water bowl for getting tamarind juice) to the dal
  • Add salt, green chilies, turmeric, red chili and coriander powder to the dal and stir it well
  • Simmer the dal for 8 to 10 minutes on a low flame for the raw tamarind aroma to go away
  • Cook the dal until you get medium-thick consistency Tampering
  • Heat pure ghee/oil in a tempering pan and add cumin seeds until they splutter
  • Add garlic and fry until they turn pink
  • Add dry red chilies, curry leaves, and Hing and fry until chilies change their color and texture becomes crisp
  • Now tamper dal with this Tadka and stir it well

  • The key to making this dal perfectly is to cook dal first at its desired consistency and tamper it.
